Strawberry Mini Donuts

My husband LOVES donuts and when he has to leave the house at 6:30am there isn’t a lot of time to run to the donut shop. So lately I have been trying different recipes to see what he likes best. These donuts were simple and I liked them because you baked them and they are mini (you don’t have to use a mini donut pan you can use full size if you like).  I got my mini donut pan at Bed, Bath and Beyond.  I also got a cup cake pen at Bed Bath and Beyond.  The cupcake pen was such a help when it came to filling the donut pan.

For the Donuts

1 cup flour

1/3 cup sugar

1 teaspoon baking powder

1/4 tsp cinnamon

1/2 teaspoon salt

1/3 cup milk

1 egg

1 tablespoon melted butter

10 to 12 fresh strawberries purred in a food processor with 2 teaspoons of jam (you can use any kind of jam I used orange this time)

1 tablespoon maple syrup

For the Glaze

3 cups powdered sugar

1/2 tsp salt

1/2 tsp vanilla

1/2 cup cold milk

reserved strawberry puree

Pre-heat your oven to 425.  Grease your donut pan with baking spray.  In a large bowl combine flour, sugar, baking powder, cinnamon and salt.  Make a well in the center of the dry ingredients and add in the milk, egg, butter, and maple syrup.

Gradually add in the strawberry puree you will probably use only about 1/2 the mixture,(Save the rest of the puree for the glaze).  Your dough will be wet, but not runny.  Put your dough in a piping bag, or cup cake pen.

Pipe batter into each well.  Bake 7-9 minutes or until the donuts spring back when touched.  Cool completely on wire rack before glazing.

For the glaze combine all ingredients until smooth.  Dip each donut in the glaze and place back on the cooling rack and allow the glaze to set.

I used a wood skewer to dip my donuts.  It made it less messy.  Also put wax paper under your cooling rack so when the glaze is setting any drips will get on the paper and not your counter top.

BEWARE since they are mini donuts it is very easy to eat a bunch of them!!!
